A superb and gorgeous herbal tea blend with Blue Butterfly Pea Flower.
This lovely vine is in the legume family and is native to Thailand where it is called Dok Anchan. There, the dried purple and blue flowers are used in a traditional herbal tea with lemon and honey, and in foods including rice and several deserts.
In our Midnight Blue Magic Flower Tea we combine the pea flowers with rose petals, lavender flowers and lemongrass for a delicious cup of herbal goodness.
In Chinese and Ayurvedic medicine, Clitoria Ternatea (Buterfly Pea Vine) has been used as a memory enhancer, brain booster, anti-stress/calming agent, an analgesic/anti-inflammatory, an anti-asthmatic, an aphrodisiac, and more. Flavonoids, anthocyanins and phenolic compounds in this flower activates antioxidant activity which helps decrease oxidative stress. The flower is also used in cosmetics, and for skin as the antioxidant content makes it useful for stimulating collagen and elastin to support rejuvenating the skin and lessening signs of ageing, including wrinkles.
Butterfly Pea Flower is easy to grow here in the Northwest, and in the South, and is resistant to most pests. Generally, if you can grow sweet peas, you can grow this.
Try it hot or iced…you won’t soon forget the experience…and neither will your children and guests! Make a strong tea and use the blue water in homemade icings or make colored ice cubes, popsicles, or… just use your imagination!
“Why does it turn colors”, you ask?
Once additional ingredients are added that contain a higher acidity (i.e. limes or lemons), the color will change from blue to purple and pink, depending on surrounding light and the acidity (pH) of the substance it is mixed with. The more acid the ingredient, the more purple the color. In water, clear spirits or milk, all neutral substances, the color is blue at pH 8 to pH 4. It will change to bright purple at pH 3 and to bright pink at pH 2.
Directions for 1 cup:
Bring 8 oz water to a boil in stainless steel, glass, or ceramic vessel (not aluminum). Turn off heat. Place one teaspoon loose tea per 8 oz. cup of water into hot water vessel, or into our reusable cotton tea bag, pulling strings tight. Steep for 5 minutes. Strain loose tea, or squeeze & remove tea bag & pour. Add honey, cream, and/or lemon, if desired.

Blue Coconut Magic
Bring 2 cups filtered water to boil, turn off heat and add 2 tsp. Midnight Blue Magic Flower Tea blend to steep for 5-7 minutes.
Strain herbs and place tea in glass Ball jar with lid, and refrigerate for at least 3 hours.
(Optionally, you can place the loose herbs in cold filtered water, and place in the refrigerator for 3 hours or longer and let infuse gently without heat.)
For one 6 ounce cup:
Pour 4 oz of your tea blend in iced shaker glass.
Add 1 teaspoon honey, or agave, or rice syrup
Add 2 oz. organic coconut milk
Smash two small pieces of pineapple in bottom of serving glass.
Pour shaker blend into glass or tea cup.
Top off with sprinkle of nutmeg, and a few violet flowers, or blue cornflowers.
Garnish with slice of pineapple piece on glass rim.
